Tastebuds : Vegetable Pancake



Today i am starting a new section of the blog called Tastebuds. I would post recipes for Nigerian and foreign dishes. I hope you enjoy making them at home for yourself and loved ones.


Today the first post is vegetable pancake. I am sure by now, you are tired of the regular plain pancakes and want something different. Well here is a recipe by yours truly #hehehe. 





Ingredients 
Carrots 
Green Pepper 
Red Pepper 
Onions 
Green Peas
Sugar
Salt 
Flour 
Eggs 
Water
Groundnut oil 
(I am not adding the quantity of each ingredient so you can add  according to the quantity of pancakes you are making) 


Recipe:
1. Wash your carrots, green peas, onions, red pepper, peel and chop in small sizes except the carrot. Grate the carrots.
2. Sieve the flour in a bowl, add a pinch of salt and spoonful of sugar (minimal amount according to the quantity of the flour).
3. Crack and whisk your eggs and add to the flour mixture. 
4. Add little water and stir, add more if it is too thick (make sure your mixture is not too light or thick). 
5. Add the sliced and grated ingredients in no 1 (vegetables) and stir with a wooden spoon.
6. Put your saucepan on the cooker. Add little quantity of groundnut oil. Scoop with a spoon and add into the already heated saucepan (the way you fry your egg). Keep doing that in bit till you finish frying all the mixture. 
7.  Place your golden brown vegetable pancakes in a flat plate and wallah! it is ready to munch.
